Tomato–Salmon Omega-3 Soup: A Warm, Nourishing Seasonal Dish

As the weather starts to cool and we settle into a new season, a warm, comforting soup can be just what you need. This Tomato–Salmon Omega-3 Soup is simple, energizing, and packed with nutrients that support healthy vision. It’s an easy way to enjoy a wholesome meal when the days get a little crisper.

Why This Soup Supports Eye Health

Salmon provides DHA omega-3 fatty acids, which help maintain retinal health and support a stable tear film—useful during times of the year when indoor air gets drier. Tomatoes add antioxidants like lycopene, while spinach contributes lutein, making this a well-rounded, eye-nourishing bowl.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) crushed tomatoes
  • 3 cups broth (vegetable, chicken, or fish)
  • 1 cup cooked salmon (fresh or canned)
  • 1 tsp oregano (or substitute with basil, thyme, or Italian seasoning)
  • 1 cup fresh spinach
  • Lemon wedge (for finishing)

Instructions

1. Sauté the aromatics

Heat olive oil in a pot over medium heat. Add the onion and garlic, cooking until softened and fragrant.

2. Build the tomato base

Stir in the crushed tomatoes, broth, and oregano (or your preferred herb). Let the soup simmer for about 10 minutes to develop flavor.

3. Add salmon and greens

Add the cooked salmon and spinach. Simmer for another 5 minutes, just until the spinach wilts.

4. Brighten and serve

Finish with a squeeze of lemon juice to balance the richness of the tomatoes and salmon.
